Apple Pancakes with a Cottage Cheese Icing

Ingredients (Serves 5)
Pancakes:- 1 cup (250ml) cake flour (self-raising)
- ½ cup (125ml) oat bran
- 2 teaspoons (10ml) / equivalent sugar / sweetener
- 1 large egg
- 1 teaspoon (5ml) canola or sunflower oil
- 1 cup (250ml) skimmed milk
- 1 large apple
- ½ teaspoon (2ml) salt
- 1 teaspoon (5ml) bicarbonate of soda
- 1 teaspoon (5ml) baking powder
- 1 teaspoon (5ml) vanilla essence
- Cooking spray
Icing:
- 500g reduced fat / fat free cottage cheese
- 10 (10g) canderel sachets
- 4 tablespoons sugar
- 1 teaspoon (5ml) vanilla essence
Other:
- 75g mixed nuts
- Cinnamon to taste
Method
Step 1: Pancakes
- Grate the apple with the skin on and put aside.
- Beat together the egg, sugar and salt.
- Add the milk and oil and mix.
- Sift in the flour, bicarbonate of soda and baking powder. Stir in gradually, do not overmix.
- Add the apple and oat bran and stir gently.
- Allow the batter to stand for 10min.
- Set the pan to medium-high heat and spray lightly with spray-and cook.
- Add mixture (1 pancake = 1 tablespoon / 15ml) onto the pan and cook until bubbles begin to form. Then flip and cook until the other side browns.
- Repeat with the remaining batter.
Step 2: Icing
- Beat the sweetener, cottage cheese and vanilla essence to form an icing.
- Place 1 tablespoon on each pancake.
Step 3: Putting it all together
- Place 4 pancakes on the plate.
- Add 1 tablespoon of icing to each pancake.
- Crush nuts by placing them in a ziplock bag and rolling over with a rolling pin.
- Sprinkle the nuts (15g per serving) over the pancake along with cinnamon.
