Ingredients (Serves 1)
- 2 slices seeded bread
- 2 tablespoons reduced fat cottage cheese
- 8 slices cucumber
- ½ avocado
- salt, pepper and coriander seeds to taste
Method
Step 1: Prepare the toast
- Place 2 slices of bread in the toaster until crisp.
Step 2: Putting it all together
- Take half an avo and mash in a separate bowl.
- Spread 1 tablespoon of cottage cheese over each slice of toast.
- Place 4 slices of cucumber over the surface of each slice of toast.
- Add ¼ avocado to each slice of toast along with a sprinkle of salt, pepper, and coriander seeds. Enjoy!
