Ingredients (Serves 1)

  • 2 slices seeded bread 
  • 2 tablespoons reduced fat cottage cheese
  • 8 slices cucumber
  • ½ avocado
  • salt, pepper and coriander seeds to taste


Method

Step 1: Prepare the toast

  1. Place 2 slices of bread in the toaster until crisp.

Step 2: Putting it all together

  1. Take half an avo and mash in a separate bowl.
  2. Spread 1 tablespoon of cottage cheese over each slice of toast.
  3. Place 4 slices of cucumber over the surface of each slice of toast.
  4. Add ¼ avocado to each slice of toast along with a sprinkle of salt, pepper, and coriander seeds. Enjoy!
