Ingredients (Serves 1)

80g extra lean mince

1 small / ½ medium onion

1 medium carrot

1 medium zucchini

1 medium tomato

1 teaspoon garlic

1 tablespoon Worcester sauce

1 tablespoon chutney

1 large egg

2 slices wholewheat bread

Mixed herbs to taste

Salt and pepper to taste

Cooking oil spray

Method

Step 1: Cooking your mince

  1. In a frying pan, add 2x 1sec spray sprays of oil then saute ½ onion and 1 tsp garlic on medium heat until onions start to become translucent.
  2. While the onions cook, grate the carrot and zucchini then chop the tomato into small blocks.
  3. Once onions are translucent add the mince, carrot, zucchini, tomato Worcester sauce and chutney to the pan. 
  4. Once the mince has started browning but is not completely cooked, create a donut shape with the mince and crack an egg into the centre.
  5. Remove from the pan once the egg is at the desired consistency.

Step 2: Putting it all together

  1. Serve the mince and egg with 2 slices of toast and enjoy.
