Ingredients (Serves 1)

  • 100g chicken breast, grilled without skin
  • 80g broccoli
  • 50g carrots
  • 100g brown rice, cooked
  • 1 teaspoon oil
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 1/2 bell pepper, sliced

Method

  • Cook rice per package instructions.
  • Heat oil in pan, stir-fry chicken until browned.
  • Add veggies, soy sauce and ginger, cook until tender.
  • Serve over brown rice.
