Ingredients (Serves 1)
- 100g chicken breast, grilled without skin
- 80g broccoli
- 50g carrots
- 100g brown rice, cooked
- 1 teaspoon oil
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- 1/2 bell pepper, sliced
Method
- Cook rice per package instructions.
- Heat oil in pan, stir-fry chicken until browned.
- Add veggies, soy sauce and ginger, cook until tender.
- Serve over brown rice.
