Ingredients (Serves 1)
- 3 large chicken breasts, without skin
- 1 cup cannellini beans
- 200g baby spinach
- 10 cherry tomatoes
- 1 tablespoon olive oil
- 1 tablespoon mixed herbs
Method
- Heat olive oil in a large skillet.
- Add chicken and Italian seasoning, cook until lightly browned.
- Stir in beans and tomatoes, cook 5 min.
- Add spinach, stir until wilted.
- Season to taste.
