Ingredients (Serves 1)
- 1 medium chicken breast, grilled without skin
- 80g brown rice, cooked
- 1 cup mixed vegetables
- 1 cup bell pepper
- 1 tablespoon soy sauce
- 1 garlic clove, minced
- 1 teaspoon olive oil
Method
- Cook rice per package instructions.
- In a pan, add oil and cook chicken until browned and fully cooked. Remove chicken from pan and set aside.
- Add chopped veggies and garlic to the pan, allow to cook until soft.
- Add soy sauce and cooked chicken.
- Serve over brown rice.
