Ingredients (Serves 1)

  • 1 medium chicken breast, grilled without skin
  • 80g brown rice, cooked 
  • 1 cup mixed vegetables
  • 1 cup bell pepper
  • 1 tablespoon soy sauce
  • 1 garlic clove, minced
  • 1 teaspoon olive oil

Method

  • Cook rice per package instructions.
  • In a pan, add oil and cook chicken until browned and fully cooked. Remove chicken from pan and set aside.
  • Add chopped veggies and garlic to the pan, allow to cook until soft.
  • Add soy sauce and cooked chicken.
  • Serve over brown rice.
