One-Pan Lemon Herb Chicken with Veggies

Ingredients (Serves 1)

  • 3 chicken breasts
  • 3 average size potatoes, diced
  • 300g broccoli
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • 1 teaspoon mixed herbs
  • Salt and pepper for taste

Method

  • Preheat oven to 200°C.
  • On a large baking tray, toss potatoes in olive oil, herbs, salt and pepper. Roast 15 min.
  • Add chicken breasts and broccoli, drizzle with lemon juice, roast another 20 min until chicken is cooked.
