Ingredients (Serves 1)
- 3 chicken breasts
- 3 average size potatoes, diced
- 300g broccoli
- 1 tablespoon olive oil
- Juice of 1 lemon
- 1 teaspoon mixed herbs
- Salt and pepper for taste
Method
- Preheat oven to 200°C.
- On a large baking tray, toss potatoes in olive oil, herbs, salt and pepper. Roast 15 min.
- Add chicken breasts and broccoli, drizzle with lemon juice, roast another 20 min until chicken is cooked.
