Ingredients (Serves 1)
- 150g red lentils, boiled in unsalted water
- 80g baby spinach, raw
- 50g brown onion, raw
- 100g cherry tomatoes, raw
- 1 teaspoon curry powder
- 1 teaspoon olive oil
- 100g brown rice, cooked
Method
- Cook rice per packed instructions.
- In a pan, on medium heat, add olive oil and sauté onion until soft.
- Add in curry powder, tomatoes and cooked lentils.
- Add spinach, cook until wilted, serve with rice.
