Ingredients (Serves 1)

  • 150g red lentils, boiled in unsalted water
  • 80g baby spinach, raw
  • 50g brown onion, raw
  • 100g cherry tomatoes, raw
  • 1 teaspoon curry powder
  • 1 teaspoon olive oil
  • 100g brown rice, cooked

Method

  • Cook rice per packed instructions.
  • In a pan, on medium heat, add olive oil and sauté onion until soft.
  • Add in curry powder, tomatoes and cooked lentils.
  • Add spinach, cook until wilted, serve with rice.
