Ingredients (Serves 1)

  • 80g chicken breast, grilled without skin
  • 80g black beans, canned, drained
  • 100g brown rice, boiled in unsalted water
  • 50g salsa
  • 22g cheddar cheese
  • 1 tablespoon coriander leaves, fresh
  • 1 teaspoon paprika 

Method

  • Cook rice per package instructions.
  • In a pan, cook chicken with paprika.
  • Add beans and rice to the chicken mixture, cook until warm
  • In a bowl, add chicken and black bean mixture.
  • Top with salsa and cheese.
  • Garnish with coriander before serving.
