Ingredients (Serves 1)
- 80g chicken breast, grilled without skin
- 80g black beans, canned, drained
- 100g brown rice, boiled in unsalted water
- 50g salsa
- 22g cheddar cheese
- 1 tablespoon coriander leaves, fresh
- 1 teaspoon paprika
Method
- Cook rice per package instructions.
- In a pan, cook chicken with paprika.
- Add beans and rice to the chicken mixture, cook until warm
- In a bowl, add chicken and black bean mixture.
- Top with salsa and cheese.
- Garnish with coriander before serving.
