Ingredients (Serves 1)

  • 100g plain cottage cheese
  • 100g quinoa, cooked
  • 2 teaspoon green pesto
  • 5 cherry tomatoes, raw
  • 1/2 cup cucumber, sliced
  • 1 teaspoon pumpkin seeds

Method

  • Cook quinoa as per package instructions.
  • Place quinoa and cottage cheese in a bowl
  • Stir pesto into cottage cheese.
  • Top with tomatoes, cucumber and pumpkin seeds.
