Ingredients (Serves 1)
- 100g plain cottage cheese
- 100g quinoa, cooked
- 2 teaspoon green pesto
- 5 cherry tomatoes, raw
- 1/2 cup cucumber, sliced
- 1 teaspoon pumpkin seeds
Method
- Cook quinoa as per package instructions.
- Place quinoa and cottage cheese in a bowl
- Stir pesto into cottage cheese.
- Top with tomatoes, cucumber and pumpkin seeds.
